Healthy Snack Recipe #1: The Powerballs
This recipe is so quick that it doesn’t even ask for baking. Yet it is rich in protein and a variety of vitamins and minerals that are good for your kids.
Ingredients:
- 1 cup of peanut butter
- 1 cup of honey
- 3 cups of whole grain oats
- 1/2 cup of ground flaxseed
- 1 cup of semi-sweet chocolate chips
- 1 cup of nuts and dried fruits mixture (can be any combination of peanuts, walnuts, almonds, raisins, chopped cranberries etc)
Preparation method:
- Start with combining butter and honey in a large bowl, mix until smooth.
- Pour in oats, flaxseed, chocolate chips, and nuts and dried fruits mixture. Toss to mix and combine.
- Roll the mixture into balls. Store the Powerballs snack in fridge.
This recipe makes 40-60 snack balls.
Healthy Snack Recipe #2: Crunchy Veggie Nuggets
Crunchy nuggets are always popular among kids. This recipe is so simple, and it can help you to get your kids to eat vegetables!
Ingredients:
- 2 pounds of potatoes
- 2 cups of mixed vegetables (carrot, corn, peas or any vegetables you like, make sure they are in small pieces)
- 2 eggs, beaten
- 1 cup of whole wheat flour
- 2 cups of corn flakes, crushed
- Vegetable oil
Preparation method:
- Boil and peel potatoes. Mash the potatoes until smooth. Mix in vegetables and stir to combine well with mashed potatoes.
- Now we are going to start making the nuggets. First, get about a spoonful of the vegetables and mashed potatoes mixture and shape into a nugget. Roll nugget in flour to coat, followed by egg, and lastly corn flakes. Continue to form nuggets for the remaining mixture. When all are done, place them in a fridge and chill for about 30 minutes for the nuggets to hold their shape.
- It’s time to cook the nuggets. Heat vegetable oil in a frying pan over medium-high heat. When the oil is hot enough, fry the vegetable nuggets in batch for 2-3 minutes until nuggets get crisp and brown. Drain on absorbent paper towel to remove excessive oil.
This recipe makes 10-15 vegetable nuggets.
