Cheese and Herb Bread Bites
What you need:
- 3 cups bread flour
- 1 1/4 cups warm water
- 3 tablespoons grated Parmesan cheese
- 2 tablespoons butter, softened
- 2 tablespoons white sugar
- 2 tablespoons dry milk powder
- 1 tablespoon active dry yeast
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons dried thyme
- 1 1/2 teaspoons dried marjoram
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
Combine all ingredients in a bread machine pan. Use the Basic or White Bread Cycle option when making this recipe using a bread machine. When ready, slice bread into bite-sized pieces before serving.
The Healthy Chili
What you need:
- 1 kg. lean ground beef
- 5 3/4 cups tomato juice
- 3 1/2 cups tomato sauce
- 2 cups canned red beans, drained and rinsed
- 1 1/2 cups chopped onion
- 1/2 cup chopped celery
- 1/4 cup chopped green bell pepper
- 1/4 cup chili powder
- 2 teaspoons ground cumin
- 1 1/2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon white sugar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 1/8 teaspoon ground cayenne pepper
In a large skillet, cook ground beef over medium-high heat until evenly brown, about 8 to 10 minutes. Remove from heat, drain and crumble. Set aside. In a large pot, mix together the rest of the ingredients and bring to a boil. Lower heat then allow to simmer for 1 to 1 1/2 hours, stirring occasionally. Add cooked ground beef to the pot, stir and heat through before serving.
Herbed Deviled Eggs
What you need:
- 12 hard-boiled eggs, peeled and halved
- 1/4 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon mustard
- 1 tablespoon vinegar
- 4 teaspoons finely chopped fresh chives
- 2 teaspoons granular sucralose sweetener (like Splenda)
- 2 teaspoons chopped fresh thyme
- 1 teaspoon chopped fresh oregano
- 1 teaspoon chopped fresh sage
- 1/2 teaspoon chopped fresh rosemary
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon garlic salt
- 1/8 teaspoon salt
Crush together thyme, oregano, sage, rosemary, garlic salt and salt in a mortar and pestle. Add vinegar to the mixture and mix to combine well with herbs. Set aside. Remove egg yolks from each egg and place on a large bowl. Using a clean fork, mash the yolks until fine. Add chives, ground black pepper and herb mixture into the bowl and mix well with egg yolks. Stir in mayonnaise, sour cream, mustard and sweetener. Stir until mixture is very smooth. Scoop mixture into egg white halves using a teaspoon then serve.
