Why 2 simple chicken herb recipes hold an important secret key back to your good health
Let’s define our goal and see if we can achieve it without giving in to the fast food industry’s menu of low nutrition, calorie filled and high chemical content foods. Our goal for this first in a series of healthy eating articles, is to create a healthy eating menu that is simple, fast and healthy. Each one of the following recipes will clear the road for you and your family’s way back to health and energy.
Fresh herb recipe 1 – Easy Baked Chicken Pieces with Herbs
Tools: medium sized bowl, baking pan or casserole dish
- Pre-heat oven to 350 degrees
- Place 4-6 pieces of skinless chicken (boneless or bone included) into baking pan or casserole dish
- In medium sized bowl add 6 tablespoons of virgin olive oil
- Add 2 tablespoons thyme, 1 tablespoon basil, 1/2 teaspoon of ground pepper, one chopped garlic clove and 1 teaspoon curry powder to the oil and stir lightly
- Spoon oil and herb mixture over chicken pieces in baking dish
- Place chicken in the oven and cook for approximately 20 – 30 minutes, or until interior of chicken reaches 185 degrees Fahrenheit if you are using a meat thermometer
While chicken is cooking, steam or boil your favorite vegetables and serve with whole grain rice or salad.
Because we are using the healthy cooking method of baking, and we can “set and forget’ the oven until serving, your actual preparation time for this meal is only about 5 to 10 minutes!
Fresh herb recipe 2 – Easy Full Herb Roasted Chicken Recipe
Tools: medium sized bowl, baking pan or casserole dish, wooden spoon, meat thermometer (optional)
- Pre-heat oven to 380 degrees
- In medium size bowl, add 2 table spoons melted butter or margarine and 2 table spoons virgin olive oil
- Add 1 tablespoon cilantro, 1 tablespoon thyme, 1 tablespoon oregano, 1/2 teaspoon ground black pepper to butter/oil mixture
- Add approximately 4 tablespoons whole grain flour and mix gently into oil/herb mixture until a smooth paste is achieved
- With the back of a wooden spoon or spatula, spread mixture over entire outside of chicken
- Place chicken in the oven and cook for approximately 1 hour or until interior of chicken reaches 185 degrees (I recommend a meat thermometer highly. It takes all the guesswork and checking and re-checking out of your meat preparation. Set it and forget it, that’s what we’re after here.)
Serve with your choice of vegetables, salads or boiled potatoes (skins on.)
Once again, the preparation of the chicken herbs and spices coating will take only 5 minutes. Combined with the vegetables, you’re looking at 15 minutes of actual preparation time.
