Green Salad Recipes are a great way to lose weight, keep your body strong, and give you a variety of food and colour in your diet. Salads are quick and simple to make, and are very filling. The more nutrients your salad has, the more you will feel satisfied.
I have heard many people say that you cannot become satisfied by just eating a salad for lunch. I used to think this myself, until I changed the way I ate. In the short time of 3 months I lost 23 kilograms, and have managed to keep the weight off for over a year.
One of the green salad recipes that I make for lunch is below. Enjoy!
Hearty Salad
Ingredients
Vegetables
2 Handfuls of Lettuce Mix
1 Lebanese Cucumber
Half of a Yellow Capsicum
Handful of Snow Peas
1 Large Tomato
1 Large Avocado
1 Small Carrot
1 Small Zucchini
1 Handful of Watercress
Dressing and Seasoning (this can be put in a separate container so your salad doesn’t go soggy)
Juice of 1 large lemon
Same amount of olive oil, as lemon juice
2 pinches of Italian Mixed Herbs
Pinch of salt
Method
For this you will need a big bowl, a chopping board and a big sharp knife. (Be careful of the fingers)
- Roughly chop up the Vegetables into small pieces, except the Tomato. Put these into the bowl.
- Take the Tomato and chop into large pieces, put this aside.
- Add the olive oil, lemon, herbs and salt stir well and leave to sit for 10 minutes before serving
- Add the Tomato, mix and serve
Serves: 4 as a side
Comments: The more colorful the salad the better it is for you. The basis for the salad is the green stuff and I like to use a mescaline mix including some baby spinach for this, as you then get all the different flavors and textures. I like to chop up my salad ingredients quite small as this allows the dressing to draw out the flavors of the ingredients
Being able to bend down and touch the floor without crushing my organs with my stomach, climbing steep stairs or hills without losing breath, and being able not to think about eating all the time are some of the things that I am now very grateful for.
