Recipe for Chicken with Creamy White Sauce

What You Need

  • 5 Tablespoons butter or margarine
  • 3 pounds boneless chicken
  • ½ pound quartered mushrooms
  • 1 bunch chopped scallions
  • 2 ½ cup chicken broth
  • Salt and pepper to taste
  • 2 Tablespoons flour
  • 1 cup light cream
  • 1 teaspoon dried tarragon
  • 1/3 cup finely chopped walnuts

How to Make It

Use paper towels to dry the chicken thoroughly before cooking.

Using a large heavy skillet, heat 3 tablespoons of butter or margarine over a medium heat. Add the chicken into the skillet skin side down and saute. Turn occasionally in order to brown the meat evenly on all sides. Remove from heat and then set aside until needed.

Add mushrooms and scallions to the skillet and cook, while stirring frequently until they are lightly brown. Add browned chicken to the skillet and then add the chicken broth and salt and pepper to taste. Cover and allow this to simmer for approximately 30 to 45 minutes or until tender.

Remove chicken and vegetables from the skillet, placing them onto a serving platter and then set aside until needed, while keeping warm.

Reserve the liquid in the skillet to prepare the creamy white sauce.

Using a small saucepan over a low heat, you will melt 2 tablespoons butter or margarine. Add the flour. Stir constantly and cook for approximately 3 to 4 minutes.

Gradually add the light cream and reserved liquid, while constantly stirring with a whisk. Simmer on low until the sauce is thick yet smooth in consistency. Stir in tarragon and chopped walnuts and then pour over chicken and vegetables before serving.
