Chicken Apple Sausage: A Healthy Way to Eat Sausages

For many years consumers have been shying away from commercially-manufactured sausages due to their fat content, and fearing what makers have dumped into the mixture. But what if you can make your healthy and delectable homemade sausages and create your own chicken apple sausage?

Chicken, onions, leeks and lemon can make for scrumptiously lean and moist sausage recipes. • Preheat oil. Add the leek, apples, parsley and onion. Sauté until golden brown. Pour on the mixture into a bowl. Let cool and refrigerate.

Preparing Farce:

• Process the meat, white pepper, and salt together into a food processor for half an hour.
• Drop the crush ice into the operating food processor. Continue processing for 3 minutes. Transfer the farce into a medium-size bowl and refrigerate.

Assembling the sausage:

• Cut leg meat into ¼ inch cubes. Zest lemon. Combine the farce, apple garnish and lemon juice into a bowl. Add in the cubed chicken and mix well.
• Tie one end of the casing. Put mixture into a pastry case. Pipe the mixture into the sausage casing and tie the other end.
• Squeeze the sausage after every four inches for these sausage recipes to separate the mixture. Twist at those points to get desired sausage length.
• Poach them in a pan for 15 minutes. Take out and cook in the oven for 12 minutes until browned.
• Add sour cream and mustard. Spoon mustard sauce in every plate in a decorative way. Garnish with lingonberry before serving.
• Serve.
